On Today's Menu: Courgette & Mozerella Salad

Full of flavour and super simple to make from everyday ingredients, this healthy dish is perfect for summer when you're craving something light and fresh. Wafer-thin strips of courgette are paired perfectly with creamy mozzarella, chives and zesty lemon juice.

Courgette & Mozzarella Salad

 

Ingredients

2 x courgette/ zucchini
1 x Buffalo Mozzarella Ball
Drizzle of your best Olive Oil
1-2 crisp radish
Chives
Zest & juice of half a lemon
1 pinch of salt
5-6 Cherry tomatoes

Serves: 2 generous portions or 3 smaller portions

 Steps

  1. Using a mandolin slicer, carefully slice - as thin as you dare! - the Courgette length ways – creating wafer thin strips.
  2. Place zucchini strips into a small salad bowl, add a big pinch of salt, the zest & juice of 1⁄2 a lemon, plus some pepper. Finely chop the chives and sprinkle in, add a drizzle of olive oil. Toss to coat and allow to rest for 5 minutes.
  3. Prepare the cherry tomatoes by slicing into quarters. Using the mandolin slicer, slice the radish.
  4. After 5 minutes, the courgettes will have softened slightly. Gently place the courgette strips onto the serving plate, leaving most of the dressing behind. Artfully scatter the radishes and tomatoes over the courgette strips.
  5. Cut the Mozzarella ball in to quarters, a 1/3 of the way deep, then tear apart with your hands. The rough edges of the ball catch the dressing better.
  6. Add a pinch of salt, drizzle the rest of the dressing left in the bowl.
